Easy, guilt-free chocolate cookies

Brenda Danner, a registered/certified dietitian with St. Francis Hospital and Health Centers, shared plenty of healthful holiday dishes with us last month. But we saved the best for last: chocolate. And with these three low-fat recipes, you can fulfill that sweet tooth without the guilt.
CHOCOLATE NO-BAKES
6 tablespoons unsweetened
baking cocoa
1⁄4 cup non-fat dry milk
1⁄4 cup sugar
1⁄4 cup light corn syrup
1⁄2 cup skim milk
3 tablespoons creamy peanut butter
1⁄4 cup light margarine
1 tablespoon vanilla
31⁄2 cups oats, old fashioned or quick
Mix cocoa, dry milk, sugar, corn syrup, milk, peanut butter and margarine in medium saucepan, bring to a boil & continue to boil 1-2 minutes. Remove from heat. Stir in vanilla. Measure oats into medium bowl and pour hot mixture over them; mix well. Drop by spoonfuls onto wax paper and allow to cool. Transfer to container and refrigerate.
YIELD: 36 cookies
